Creamy Tomato Soup

Ingredients
  

  • 28 oz canned crushed tomatoes
  • 1 medium yellow onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • 2 tbsp olive oil
  • 1 tsp sugar
  • 1/2 tsp dried basil
  • salt to taste salt
  • pepper to taste pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  • Add minced garlic and cook for another minute until fragrant.
  • Pour in crushed tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Use an immersion blender to blend the soup until smooth. Alternatively, carefully transfer the soup to a blender and blend until smooth.
  • Stir in heavy cream, sugar, and dried basil. Season with salt and pepper to taste.
  • Serve hot and enjoy!
