Instructions
In a large pot or Dutch oven, melt butter over medium heat. Add onion and celery and sauté until softened, about 5-7 minutes.
Add stewed tomatoes, tomato puree, tomato paste, and chicken broth. Bring to a simmer.
Stir in Italian seasoning, oregano, and coconut sugar (if using). Reduce heat to low, cover, and simmer for 20 minutes, stirring occasionally.
Stir in heavy cream and minced garlic. Simmer for another 5 minutes.
Season with salt and pepper to taste. Garnish with fresh parsley and thyme before serving.
