Creamy Tomato Soup

Ingredients
  

  • 2 tbsp Butter
  • 1 medium Onion chopped
  • 1 medium Celery chopped
  • 28 oz Stewed Tomatoes with juice
  • 1 cup Tomato Puree
  • 2 tbsp Tomato Paste
  • 2 cups Chicken Broth
  • 1 tsp Italian Seasoning
  • 1 tsp Oregano
  • 1 tsp Coconut Sugar optional
  • 1/2 cup Heavy Cream
  • 1 tsp Minced Garlic
  • 1/4 cup Italian Parsley chopped
  • 1 tsp Thyme
  • Salt to taste Salt
  • Pepper to taste Pepper

Instructions
 

  • In a large pot or Dutch oven, melt butter over medium heat. Add onion and celery and sauté until softened, about 5-7 minutes.
  • Add stewed tomatoes, tomato puree, tomato paste, and chicken broth. Bring to a simmer.
  • Stir in Italian seasoning, oregano, and coconut sugar (if using). Reduce heat to low, cover, and simmer for 20 minutes, stirring occasionally.
  • Stir in heavy cream and minced garlic. Simmer for another 5 minutes.
  • Season with salt and pepper to taste. Garnish with fresh parsley and thyme before serving.
