Ingredients
  

  • 4 cans black beans
  • 1 onion onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 4 cups vegetable broth
  • 1 chorizo (optional)

Instructions
 

  • Combine all ingredients in a slow cooker.
  • Cook on low for 6-8 hours or on high for 3-4 hours.
  • If desired, use an immersion blender to partially blend the soup for a creamier texture.
  • Garnish with cilantro, sour cream, and blue corn chips.
