Crock Pot Chicken Tortilla Soup

Ingredients
  

  • 1.5 lbs Chicken Breast
  • 1 can Diced Tomatoes
  • 1 can Black Beans
  • 1 onion Yellow Onion diced
  • 1 tsp Chili Powder
  • 0.5 tsp Cumin
  • 0.25 tsp Garlic Powder
  • 4 cups Chicken Broth
  • to taste Salt
  • to taste Pepper

Instructions
 

  • Place chicken breast in crock pot.
  • Add diced tomatoes, black beans, diced onion, chili powder, cumin, garlic powder, and chicken broth to the crock pot.
  • Season with salt and pepper to taste.
  • Cook on low for 6-8 hours or on high for 3-4 hours.
  • Shred the chicken with two forks.
  • Stir the shredded chicken back into the soup.
  • Let soup cook for another 20 minutes.
  • Serve hot with optional toppings like sour cream, shredded cheese, salsa and tortilla chips.
