remove fish scales and internal organs, wash and drain

for pan-frying

Instructions
Cut the tofu into cubes
Add oil to a wok, pan-fry the fish first until brown on both sides.
Add water to the wok with fish, add ginger, garlic, cooking wine, cover and stew for 8 minutes.
Add the tofu to the wok with fish, stew for 3 minutes again, then add salt, turn off the heat, top with chopped coriander.
