Dairy-Free Instant Pot Corn Chowder

Ingredients
  

  • 6 slices bacon
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 stalks celery diced
  • 4 cups vegetable broth
  • 4 cups potatoes peeled and cubed
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups corn fresh or frozen
  • 1 cup dairy-free milk unsweetened almond or cashew

Instructions
 

  • Cook bacon in the Instant Pot on the sauté setting until crispy. Remove bacon and set aside, leaving the bacon grease in the pot.
  • Add olive oil to the pot. Add onion and celery and sauté until softened, about 5 minutes.
  • Add vegetable broth, potatoes, thyme, salt, and pepper to the pot. Seal the lid and cook on high pressure for 10 minutes, followed by a 10-minute natural pressure release.
  • Carefully remove the lid and stir in the corn and dairy-free milk. Simmer for 5 minutes.
  • Crumble the cooked bacon and stir it into the chowder. Serve immediately.
