Ingredients
  

  • 1 bunch Kale Remove tough stems
  • 1 bunch Parsley Fresh
  • 1 bunch Cilantro Fresh
  • 1 cup Spinach Packed
  • 2 stalks Celery Chopped
  • 1 medium Lemon Juiced
  • 1 tablespoon Coriander seeds Ground
  • 6 cups Vegetable broth Low sodium
  • 1 tablespoon Olive oil Extra virgin
  • 1/2 teaspoon Salt To taste
  • 1/4 teaspoon Black pepper To taste

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add celery and cook until softened, about 5 minutes.
  • Add kale, parsley, cilantro, and spinach. Cook until wilted, about 3-5 minutes.
  • Pour in vegetable broth and bring to a boil.
  • Reduce heat and simmer for 15 minutes.
  • Stir in lemon juice, coriander seeds, salt, and pepper.
  • Blend with an immersion blender until smooth.
  • Serve hot.
