Instructions
Heat olive oil in a large pot over medium heat.
Add celery and cook until softened, about 5 minutes.
Add kale, parsley, cilantro, and spinach. Cook until wilted, about 3-5 minutes.
Pour in vegetable broth and bring to a boil.
Reduce heat and simmer for 15 minutes.
Stir in lemon juice, coriander seeds, salt, and pepper.
Blend with an immersion blender until smooth.
Serve hot.
