Instructions
Sauté chopped onion in 1 tablespoon of oil in a heavy pan.
Add cubed peppered ham to the onions.
Dump in the frozen black eyed peas.
Add 8-10 cups of water or broth.
Bring to a boil, then reduce heat and simmer for 45 minutes.
Season with salt and pepper to taste.
