Melt 2 tbsp of butter in a saucepan. Add chopped garlic and cook until golden brown, then add the potatoes. Stir and add another 2 tbsp of butter. Saute for a few minutes.
Add 1 cup of water and 1 tsp of salt. Cover and bring to a boil. Add more water if needed to tenderize the potatoes.
Once potatoes are cooked, transfer to a blender a little at a time, adding milk as you blend until smooth.
Transfer the blended potatoes back to the saucepan and set to medium heat. Add the remaining milk (adjust to desired consistency) and 1.5 tbsp of butter.
Stir constantly until well combined. Season with salt, pepper, and herbs of your liking. Bring to a boil, then turn off the heat.
Serve hot, garnished with onion leaves or fresh parsley.
