Easy Cream Of Potato Soup

Ingredients
  

  • 1.5 lb potatoes
  • 2.25 cups regular milk
  • 1.5 cups lukewarm water
  • 5.5 tbsp butter
  • 4-5 cloves garlic chopped
  • 1 tsp salt to taste
  • to taste pepper
  • optional dried parsley
  • optional onion leaves or fresh parsley to garnish

Instructions
 

  • Wash and cut the potatoes into small pieces.
  • Melt 2 tbsp of butter in a saucepan. Add chopped garlic and cook until golden brown, then add the potatoes. Stir and add another 2 tbsp of butter. Saute for a few minutes.
  • Add 1 cup of water and 1 tsp of salt. Cover and bring to a boil. Add more water if needed to tenderize the potatoes.
  • Once potatoes are cooked, transfer to a blender a little at a time, adding milk as you blend until smooth.
  • Transfer the blended potatoes back to the saucepan and set to medium heat. Add the remaining milk (adjust to desired consistency) and 1.5 tbsp of butter.
  • Stir constantly until well combined. Season with salt, pepper, and herbs of your liking. Bring to a boil, then turn off the heat.
  • Serve hot, garnished with onion leaves or fresh parsley.
