Easy Italian Chicken and Bread Soup

Ingredients
  

  • 12 oz Italian chicken sausage mild
  • 8 cups Chicken broth
  • 1 cup Diced tomatoes
  • 1 cup Chopped carrots
  • 1 cup Chopped celery
  • 1/2 cup Chopped onion
  • 4 cups Cubed bread stale or day-old
  • 1/4 cup Chopped fresh parsley
  • 2 tbsp Olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add sausage and cook, breaking it up with a spoon, until browned.
  • Add onion, carrots, and celery to the pot and cook until softened, about 5 minutes.
  • Pour in chicken broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 15 minutes.
  • Stir in Italian seasoning, salt, and pepper.
  • Add cubed bread and cook until softened, about 5 minutes.
  • Stir in fresh parsley before serving.
