Easy Potato Soup

Ingredients
  

  • 2 tablespoons butter
  • 1/4 cup flour
  • 16 oz beef broth canned
  • 2 cups water
  • 4 cups new potatoes small, peeled or unpeeled, quartered
  • 2 cups baby carrots halved
  • 1/2 teaspoon pepper
  • 1 teaspoon dried basil leaves
  • 2 leaves bay leaves
  • 1/2 teaspoon minced garlic
  • 1 teaspoon minced onion

Instructions
 

  • In a large pan (like a 5 quart pan), add butter and allow to melt with the flour.
  • Add the broth, water, potatoes and carrots.
  • Add the remaining ingredients and stir.
  • Cook until the carrots and potatoes are fork tender. Remove the bay leaves.
  • Serve the potato soup in a bowl with bread and butter.
