Easy Thai Curry Chicken Soup

Ingredients
  

  • 7 cups Water
  • 1/2 cup Peanut Butter
  • 2 cups Cooked Chicken Shredded or sliced
  • 1 1/2 cups Cooked Rice
  • 1 can Coconut Milk
  • 1 can Bean Sprouts
  • 1 cup Carrots Shredded or thinly sliced
  • 4 tbsp Curry Powder
  • Pinch Salt
  • Pinch Pepper

Instructions
 

  • Bring water to a boil.
  • Add carrots and simmer until tender.
  • Add peanut butter and stir until dissolved.
  • Add coconut milk and stir until well blended.
  • Add chicken, rice, bean sprouts and spices. Stir well.
  • If soup seems too thick, add a little more water.
