Easy Tortilla Soup (Gluten Free, Dairy Free, Soy Free)

Ingredients
  

  • 2 containers Gluten Free, MSG Free Chicken Stock 32 oz each
  • 2 lb Diced Pre-cooked Chicken Leftovers work perfectly
  • 1 can Unseasoned Black Beans 16 oz
  • 1.5 c Corn Frozen or 1-16 oz can (salt-free)
  • 1.5 c Green Beans Frozen or 1-16 oz can (salt-free)
  • 2 cans Diced Tomatoes & Green Chilies 16 oz each, or substitute with 1 jar of salsa
  • As needed Dairy-free Shredded Cheese Optional garnish
  • As needed Avocado Optional garnish
  • As needed Tortilla Chips For serving

Instructions
 

  • Combine chicken stock, chicken, black beans, corn, and green beans in a large pot.
  • Bring to a boil, then reduce heat and simmer for 15-20 minutes to allow flavors to meld.
  • Stir in diced tomatoes & green chilies and heat through.
  • Serve hot, garnished with dairy-free shredded cheese and avocado (optional). Serve with tortilla chips.
