Farro Soup Compilation

Ingredients
  

  • 1 cup Farro
  • 8 cups Broth Vegetable or Chicken
  • 1 onion Onion Diced
  • 2 carrots Carrots Diced
  • 2 celery stalks Celery Diced
  • 1 lb Sausage Italian or your preference
  • 1 bunch Kale Chopped
  • 1 can Diced Tomatoes 14.5oz
  • 1 cup White Beans Cannellini or Great Northern
  • 2 cloves Garlic Minced
  • 1/4 cup Parmesan Cheese Grated
  • 2 tbsp Olive Oil
  • 1 tsp Dried Herbs Italian blend or your preference
  • Salt to taste Salt
  • Pepper to taste Pepper

Instructions
 

  • Rinse the farro under cold water.
  • Heat olive oil in a large pot or Dutch oven over medium heat.
  • Add sausage and cook until browned, breaking it up with a spoon. Remove sausage and set aside.
  • Add onion, carrots, and celery to the pot and cook until softened, about 5-7 minutes.
  • Add garlic and cook for 1 minute more.
  • Add farro, broth, diced tomatoes, and herbs to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until farro is tender.
  • Stir in white beans and cooked sausage. Simmer for another 5-10 minutes.
  • Stir in kale and cook until wilted, about 2-3 minutes.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with grated Parmesan cheese.
