Rinse the farro under cold water.
Heat olive oil in a large pot or Dutch oven over medium heat.
Add sausage and cook until browned, breaking it up with a spoon. Remove sausage and set aside.
Add onion, carrots, and celery to the pot and cook until softened, about 5-7 minutes.
Add garlic and cook for 1 minute more.
Add farro, broth, diced tomatoes, and herbs to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until farro is tender.
Stir in white beans and cooked sausage. Simmer for another 5-10 minutes.
Stir in kale and cook until wilted, about 2-3 minutes.
Season with salt and pepper to taste.
Serve hot, garnished with grated Parmesan cheese.
