Frozen Pea Soup

Ingredients
  

  • 2 tsp vegetable oil
  • 1 cup chopped onion
  • 1 1/2 tsp minced garlic Use double the amount if using purchased minced garlic.
  • 4 cups frozen green peas
  • 3 cups chicken or vegetable stock
  • 1 cup peeled diced potatoes
  • pinch salt
  • to taste freshly ground black pepper
  • 2 Tbsp low-fat sour cream For garnish
  • 1/4 cup chopped fresh mint or parsley For garnish

Instructions
 

  • Spray a non-stick saucepan with cooking oil, add the vegetable oil and place over medium heat. Sauté the onion and garlic for 5 minutes or until the onion is soft and lightly browned.
  • Stir in the peas, stock, potatoes, salt and pepper. Bring to a boil, then reduce the heat to a simmer. Cover and cook for 15 minutes.
  • Transfer the soup to a blender or food processor and purée until smooth, working in batches if necessary.
  • Ladle into individual bowls and garnish with a dolop of sour cream and a sprinkle of mint.
