Garlic Potato and Tomato Soup

Ingredients
  

  • 1 each potato sliced thinly
  • 2 each Roma tomatoes chopped
  • 2 cups water
  • 1 tablespoon lemon juice
  • 1 tablespoon onion flakes
  • 1/4 teaspoon sea salt
  • 2 each bay leaves
  • 1/8 teaspoon cayenne pepper
  • A pinch crushed red pepper
  • 2 tablespoon extra virgin olive oil garlic flavoured if possible

Instructions
 

  • Chop the potatoes in very thin, small slices, and tomatoes in small pieces.
  • Add 2 cups of water in a saucepan with the sliced tomatoes and potatoes.
  • Bring it to a boil, then turn the heat to medium.
  • Add the lemon juice, onion flakes, sea salt, bay leaves, cayenne pepper and red pepper.
  • Simmer for about 10-15 minutes.
  • Turn the heat off and add the olive oil.
  • Be sure to remove the bay leaves before serving.
