Garlicky Green Bean & Parmesan Soup

Ingredients
  

  • 1 bag extra fine green beans or fresh beans (16 oz)
  • 2 large cloves of garlic, minced
  • 3 Tbsp unsalted butter
  • 1 Tbsp extra virgin olive oil
  • 4 cups vegetable broth or chicken broth
  • 3/4 cup freshly grated Parmesan cheese
  • 1/4 cup freshly grated Romano cheese
  • 1/2 cup half and half or heavy cream for a richer taste
  • 1/4 - 1/2 Tbsp sea salt
  • 1/4 tsp freshly cracked black pepper
  • to taste Parmesan cheese for garnish

Instructions
 

  • Sauté garlic in butter and olive oil until fragrant.
  • Add green beans and vegetable broth. Bring to a boil, then simmer until beans are tender.
  • Carefully transfer the soup to a blender or use an immersion blender to puree until smooth.
  • Return the soup to the pot and stir in Parmesan cheese, Romano cheese, and half and half.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with extra Parmesan cheese.
