Gazpacho Andaluz (Cold Tomato Soup)

Ingredients
  

  • 1 kg ripe tomatoes
  • 1 cucumber cucumber
  • 1 red bell pepper red bell pepper
  • 1/2 red onion red onion
  • 2 tablespoons olive oil
  • 2 tablespoons sherry vinegar
  • 1 clove garlic
  • 1 teaspoon cumin
  • salt to taste salt
  • pepper to taste pepper

Instructions
 

  • Roughly chop the tomatoes, cucumber, and bell pepper.
  • Finely chop the red onion and garlic.
  • Combine all ingredients in a blender or food processor.
  • Blend until smooth.
  • Season with salt, pepper, and cumin.
  • Chill for at least 30 minutes before serving.
