Gluten-Free Slow Cooker Minestrone Soup

Ingredients
  

  • 8 cups Vegetable Broth
  • 29 ounces Diced Tomatoes
  • 2 cups Chopped Carrots
  • 2 stalks Chopped Celery
  • 2 cloves Minced Garlic
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1 cup Cannellini Beans drained and rinsed
  • 1 cup Small Pasta gluten-free
  • 2 cups Spinach fresh

Instructions
 

  • Combine vegetable broth, diced tomatoes, carrots, celery, garlic, oregano, basil, salt, and pepper in a slow cooker.
  • Cook on low for 6-8 hours or on high for 3-4 hours.
  • Stir in cannellini beans and pasta during the last 30 minutes of cooking.
  • Stir in spinach during the last 5 minutes of cooking.
  • Serve hot.
