Golden Mushroom Pot Roast

Ingredients
  

  • 3-4 lbs Beef Roast
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 tbsp Flour
  • 2 tbsp Oil
  • 1 medium Onion, chopped
  • 8 oz Mushrooms, sliced
  • 10.75 oz Condensed Cream of Mushroom Soup
  • 2 cans Water
  • 1.5-2 lbs Potatoes, peeled and quartered
  • 12 oz Carrots, peeled and sliced

Instructions
 

  • Sprinkle roast with salt and pepper.
  • Dredge roast in flour.
  • Brown meat on both sides in oil in a Dutch oven over medium-high heat.
  • Add onions while browning.
  • Add mushrooms.
  • Mix soup and water together.
  • Add to Dutch oven.
  • Turn down heat to simmer.
  • Simmer covered, about 1.5 to 2 hours, until fork tender.
  • Add potatoes and carrots.
  • Cover and continue cooking about 1 hour or 1 hour 15 minutes, until vegetables are fork tender.
