Green Chile Soup

Ingredients
  

  • 2 cups roasted chicken breast chopped
  • 16 ounces green chile canned or frozen
  • 1 cup fire roasted corn
  • 16 ounces tomatillo salsa
  • 12 ounces fire roasted tomatoes
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • 1 medium onion chopped finely
  • 2 cloves garlic finely minced
  • to taste salt

Instructions
 

  • In a large soup pot over medium heat add olive oil, onion, and garlic. Cook until softened.
  • Add chicken broth, green chile, fire roasted tomatoes, and fire roasted corn. Bring to a simmer.
  • Add chopped chicken and simmer for 10 minutes.
  • Season with salt to taste.
  • Serve hot.
