Green on Green Soup

Ingredients
  

  • 4 cups vegetable broth
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 8 oz spinach fresh
  • 1 lb kale chopped
  • 1 cup broccoli florets
  • 1 can cannellini beans drained and rinsed
  • 1/4 cup lemon juice
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  • In a large pot, bring vegetable broth to a boil.
  • Add onion and garlic and cook until softened, about 5 minutes.
  • Add spinach, kale, and broccoli and cook until wilted, about 5 minutes.
  • Stir in cannellini beans, lemon juice, salt, and pepper.
  • Bring to a simmer and cook for 15 minutes.
  • Serve hot.
