Grilled Broccoli Cheddar Soup

Ingredients
  

  • 6 tablespoons butter
  • 1 bowl chiles, onion, and garlic finely chopped
  • 2-3 minutes flour to thicken
  • 4 cups half and half
  • 1 cup milk
  • 4 cups broth
  • 1 head broccoli cut into bite-sized pieces
  • 2 medium carrots thick coins
  • 1 teaspoon smoked paprika
  • to taste salt
  • to taste pepper
  • 8 oz cheddar cheese reserve some for garnish

Instructions
 

  • Melt butter in a large soup pot or Dutch oven over medium heat.
  • Add chiles, onion, and garlic and saute for 3-4 minutes until fragrant.
  • Add flour and cook, whisking, for 2-3 minutes until thickened.
  • Slowly pour in half and half and milk, whisking constantly. Then pour in broth slowly while whisking.
  • Simmer for 10 minutes, occasionally whisking.
  • Add broccoli, carrots, smoked paprika, salt, and pepper. Continue to simmer for 7-8 minutes.
  • Remove from heat and stir in most of the cheddar cheese. Reserve some for garnish.
