cheddar cheese
reserve some for garnish
Instructions
Melt butter in a large soup pot or Dutch oven over medium heat.
Add chiles, onion, and garlic and saute for 3-4 minutes until fragrant.
Add flour and cook, whisking, for 2-3 minutes until thickened.
Slowly pour in half and half and milk, whisking constantly. Then pour in broth slowly while whisking.
Simmer for 10 minutes, occasionally whisking.
Add broccoli, carrots, smoked paprika, salt, and pepper. Continue to simmer for 7-8 minutes.
Remove from heat and stir in most of the cheddar cheese. Reserve some for garnish.
