Ground Turkey Soup

Ingredients
  

  • 1 lb ground turkey
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup carrots chopped
  • 1 cup celery chopped
  • 8 oz mushrooms sliced
  • 28 oz tomato sauce
  • 6 oz tomato paste
  • 8 cups chicken broth
  • 1 medium potato diced
  • 1 tsp Italian seasoning
  • salt to taste salt
  • pepper to taste pepper

Instructions
 

  • In a large pot or Dutch oven, brown the ground turkey over medium heat. Drain off any excess grease.
  • Add the onion, garlic, carrots, and celery to the pot and cook until softened, about 6-8 minutes.
  • Add the mushrooms and cook for another 3-5 minutes.
  • Stir in the tomato sauce, tomato paste, and chicken broth. Bring to a boil.
  • Add the potato, Italian seasoning, salt, and pepper. Reduce heat and simmer for 10-15 minutes, or until the potato is tender.
