Instructions
In a large pot or Dutch oven, brown the ground turkey over medium heat. Drain off any excess grease.
Add the onion, garlic, carrots, and celery to the pot and cook until softened, about 6-8 minutes.
Add the mushrooms and cook for another 3-5 minutes.
Stir in the tomato sauce, tomato paste, and chicken broth. Bring to a boil.
Add the potato, Italian seasoning, salt, and pepper. Reduce heat and simmer for 10-15 minutes, or until the potato is tender.
