Ingredients
  

  • 1 lb ground beef
  • 1 large onion, chopped
  • 2 carrots, chopped carrots
  • 2 celery stalks, chopped celery
  • 4 cups beef broth
  • 1 (14.5 oz) can diced tomatoes
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions
 

  • Brown the ground beef in a large pot or Dutch oven. Drain off any excess grease.
  • Add the onion, carrots, and celery to the pot and cook until softened, about 5-7 minutes.
  • Pour in the beef broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Stir in the kidney beans, corn, Italian seasoning, salt, and pepper. Simmer for another 10-15 minutes.
  • Serve hot.
