Ingredients
  

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 stalks celery, chopped
  • 2 medium carrots, chopped
  • 4 cups chicken broth
  • 1 15 ounce can cannellini beans, rinsed and drained
  • 1 15 ounce can diced tomatoes, undrained
  • 1 cup cooked quinoa
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion, celery, and carrots and cook until softened, about 5-7 minutes.
  • Add chicken broth, cannellini beans, diced tomatoes, quinoa, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • Serve hot, garnished with fresh parsley.
