Instructions
Heat olive oil in a large pot over medium heat. Add onion, celery, and carrots and cook until softened, about 5-7 minutes.
Add chicken broth, cannellini beans, diced tomatoes, quinoa, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
Serve hot, garnished with fresh parsley.
