Healing Red Lentil Soup with Turmeric & Ginger

Ingredients
  

  • 1 medium yellow onion diced
  • 3 ribs celery diced
  • 4 cloves garlic minced
  • 1 tablespoon olive oil
  • 6 cups vegetable broth
  • 1 cup red lentils rinsed
  • 1 teaspoon turmeric
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper optional
  • salt to taste salt
  • black pepper to taste black pepper
  • juice of 1/2 lemon lemon juice

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and celery and cook until softened, about 5-7 minutes.
  • Add garlic, turmeric, cumin, and cayenne pepper (if using) and cook for 1 minute more.
  • Pour in vegetable broth and add lentils. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender.
  • Season with salt and pepper to taste. Stir in lemon juice before serving.
