Ingredients
  

  • 2 cups cooked and chopped chicken breast about 1 pound raw or 12-14 ounces cooked
  • 2 tbsp olive oil
  • 0.5 c chopped yellow onion ½ medium onion
  • 4 cloves garlic minced
  • 2 tbsp finely minced fresh ginger
  • 64 oz low-sodium chicken broth or 8 cups
  • 0.5 c chopped broccoli florets
  • 0.5 c chopped kale
  • 0.25 c fresh parsley chopped

Instructions
 

  • In a large pot, heat olive oil over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and ginger and cook for 1 minute more.
  • Pour in chicken broth and bring to a boil. Add broccoli and kale and cook until tender-crisp, about 5-7 minutes.
  • Add cooked chicken and parsley. Heat through.
  • Serve immediately.
