Ingredients
  

  • 1 tbsp Olive Oil
  • 1 onion Onion Chopped
  • 2 carrots Carrots Sliced
  • 2 celery stalks Celery Sliced
  • 8 cups Vegetable Broth Low Sodium
  • 1 head Cabbage Shredded
  • 1 lb Chicken Breast Cooked and Shredded (optional)
  • 1 tsp Dried Thyme
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  • Pour in vegetable broth and bring to a boil.
  • Add cabbage, chicken (if using), thyme, salt, and pepper.
  • Reduce heat and simmer for 20-25 minutes, or until cabbage is tender.
  • Serve hot.
