Ingredients
  

  • 1 tbsp Olive Oil
  • 1 onion Yellow Onion, diced
  • 2 carrots Carrots, diced
  • 2 celery stalks Celery, diced
  • 4 cups Vegetable Broth
  • 1 can Diced Tomatoes
  • 1 tsp Dried Thyme
  • 1/2 tsp Dried Rosemary
  • Salt and Pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  • Add vegetable broth, diced tomatoes, thyme, and rosemary. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until vegetables are tender.
  • Season with salt and pepper to taste.
