Hearty Kale Chicken Soup

Ingredients
  

  • 2 tablespoons olive oil
  • 1/2 cup sweet onion, diced
  • 2 stalks celery, sliced finely with greens
  • 3 carrots, sliced
  • 1/2 teaspoon rubbed sage
  • 8 cups water or chicken stock
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried chives
  • 2 cans navy beans with juice
  • 2 cups kale
  • 2 cups chicken, cooked and shredded
  • 1 teaspoon Worcestershire sauce
  • salt to taste salt
  • pepper to taste pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and carrots and cook until softened, about 5 minutes.
  • Add celery and sage and cook for another 2 minutes.
  • Pour in water or chicken stock and bring to a boil.
  • Add navy beans, kale, and chicken. Reduce heat and simmer for 20 minutes.
  • Season with salt, pepper, and Worcestershire sauce to taste.
  • Serve hot.
