Hearty Lentil Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1 cup brown or green lentils rinsed
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • salt to taste
  • pepper to taste
  • 1 tablespoon lemon juice optional

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add carrots, celery, and onion and cook until softened, about 5-7 minutes.
  • Add lentils, vegetable broth, thyme, and smoked paprika to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender.
  • Season with salt and pepper to taste. Stir in lemon juice, if desired.
  • Serve hot.
