Hearty Slow Cooker Taco Soup

Ingredients
  

  • 1 lb ground beef
  • 1 onion yellow onion chopped
  • 2 cloves garlic minced
  • 15 oz diced tomatoes undrained
  • 15 oz black beans rinsed and drained
  • 15 oz corn drained
  • 1 packet taco seasoning
  • 4 cups beef broth
  • 1/2 cup sour cream for topping
  • 1/4 cup shredded cheddar cheese for topping

Instructions
 

  • Brown ground beef in a large skillet over medium heat. Drain off any excess grease.
  • Transfer browned beef to a slow cooker. Add chopped onion and minced garlic.
  • Add diced tomatoes, black beans, corn, taco seasoning, and beef broth to the slow cooker.
  • Stir well to combine.
  • Cover and cook on low for 5-6 hours or on high for 2-3 hours.
  • Serve hot, topped with sour cream and shredded cheddar cheese.
