Homemade Chicken Noodle Soup

Ingredients
  

  • 4-5 minutes per side Chicken for browning
  • 1 cup Onion chopped
  • 1 cup Carrots chopped
  • 1 cup Celery chopped
  • 30 seconds Garlic minced
  • 6 cups Chicken Broth
  • 1 cup Water
  • 1 tsp Bouillon
  • 2 bay leaves Bay Leaves
  • 1 tsp Thyme
  • 8 oz Egg Noodles
  • 2 tbsp Parsley chopped, for garnish

Instructions
 

  • Brown the chicken for 4-5 minutes per side.
  • Add onion, carrots, and celery to the pot and cook until translucent (3-5 minutes).
  • Stir in garlic and cook for 30 seconds.
  • Add chicken broth, water, bouillon, bay leaves, thyme, and chicken thighs. Bring to a boil, then simmer for 20-25 minutes, or until chicken is cooked through.
  • Remove chicken, shred, and return to pot.
  • Add noodles and cook until tender.
  • Garnish with parsley and serve.
