Indian-Spiced Green Pea Soup

Ingredients
  

  • 1 lb Frozen Green Peas
  • 4 cups Vegetable Stock
  • 1 medium Onion Chopped
  • 1 inch Ginger Peeled and Grated
  • 2 cloves Garlic Minced
  • 1 small Serrano Pepper Minced (adjust to taste)
  • Salt to taste Salt

Instructions
 

  • Sauté chopped onion, grated ginger, minced garlic, and minced serrano pepper in a pot until softened.
  • Add frozen peas and vegetable stock to the pot. Bring to a simmer and cook briefly until peas are tender.
  • Blend the soup with an immersion blender until smooth.
  • Season with salt to taste.
