Instant Pot Beer Cheese Soup With Cauliflower

Ingredients
  

  • 2 TBS butter
  • 4 cups chicken broth
  • 1 ½ cup beer
  • 1 cup carrots, finely chopped
  • ½ cup celery, finely chopped
  • 1 cup onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups cauliflower, riced
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon paprika
  • ½ teaspoon dry mustard
  • 3 TBS flour
  • 8 oz cream cheese, cubed
  • 4 cups shredded cheddar cheese
  • ¼ cup heavy cream

Instructions
 

  • Sauté onion and carrots in butter until softened.
  • Add flour and cook for 1 minute.
  • Gradually whisk in chicken broth.
  • Add cauliflower, salt, pepper, and paprika. Pressure cook on high for 5 minutes, then quick release.
  • Stir in cream cheese until melted.
  • Add cheddar cheese and heavy cream, stirring until melted and smooth.
