Instant Pot Carrot Ginger Soup

Ingredients
  

  • 2 pounds carrots
  • 1 tablespoon ginger fresh, grated
  • 4 cups vegetable broth
  • 1 tablespoon coconut oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Add carrots, ginger, vegetable broth, coconut oil, salt, and pepper to the Instant Pot.
  • Close and seal the lid. Set to high pressure for 3 minutes.
  • Quick release the pressure and carefully open the lid.
  • Use an immersion blender to puree the soup until smooth.
  • Serve and enjoy!
