Instant Pot Chicken Pot Pie

Ingredients
  

  • 1 lb chicken breast
  • 1 tbsp olive oil
  • 1 cup onion chopped
  • 1 cup carrots chopped
  • 1 cup celery chopped
  • 1/2 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 1/2 cup heavy cream
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • Cut chicken into 1-inch pieces.
  • Turn Instant Pot to saute mode. Add olive oil, then chicken and cook until browned.
  • Add onion, carrots, and celery to the Instant Pot and cook until softened.
  • Sprinkle flour over the vegetables and cook for 1 minute.
  • Pour in chicken broth and bring to a simmer, scraping the bottom of the pot.
  • Add peas, heavy cream, thyme, salt, and pepper.
  • Close and seal the Instant Pot. Cook on high pressure for 10 minutes.
  • Quick release the pressure and serve.
