Instant Pot Corn Chowder

Ingredients
  

  • 1 tablespoon olive oil
  • 6 slices bacon diced
  • 1 medium onion diced
  • 2 cups potatoes peeled and cubed
  • 4 cups chicken broth
  • 1 cup frozen corn
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Turn on the Instant Pot to the saute function. Add olive oil and bacon and cook until crispy. Remove bacon and set aside.
  • Add onion to the Instant Pot and saute until softened.
  • Add potatoes and chicken broth. Bring to a boil, then seal the Instant Pot and cook on high pressure for 5 minutes.
  • Quick release the pressure. Stir in corn and heavy cream.
  • Season with salt and pepper. Garnish with cooked bacon and serve.
