Instructions
Turn on the Instant Pot to the saute function. Add olive oil and bacon and cook until crispy. Remove bacon and set aside.
Add onion to the Instant Pot and saute until softened.
Add potatoes and chicken broth. Bring to a boil, then seal the Instant Pot and cook on high pressure for 5 minutes.
Quick release the pressure. Stir in corn and heavy cream.
Season with salt and pepper. Garnish with cooked bacon and serve.
