Instant Pot Lemon Chicken Orzo Soup

Ingredients
  

  • 1 tablespoon olive oil or butter
  • 3/4 cup onion diced
  • 1 tablespoon garlic minced
  • 3/4 cup carrot cut into small pieces
  • 3/4 cup celery cut into small pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon thyme
  • 2 cups chicken broth or vegetable broth
  • 1/2 lb chicken breast boneless and skinless
  • 1/3 cup orzo
  • 1 tablespoon lime juice
  • 2 tablespoons parsley for garnish

Instructions
 

  • Turn on your instant pot, and add the oil, onion, and garlic. Saute for a few minutes.
  • Add the carrots, celery, salt, pepper, and thyme. Mix until well combined.
  • Pour the chicken broth and add the chicken. Place the lid then cook on high pressure for 6 minutes, followed by a 10 minute natural pressure release.
  • Shred the chicken. Stir in the orzo and lime juice. Cook on high pressure for 3 minutes, followed by a quick pressure release.
  • Garnish with parsley and serve.
