Instructions
Turn on your instant pot, and add the oil, onion, and garlic. Saute for a few minutes.
Add the carrots, celery, salt, pepper, and thyme. Mix until well combined.
Pour the chicken broth and add the chicken. Place the lid then cook on high pressure for 6 minutes, followed by a 10 minute natural pressure release.
Shred the chicken. Stir in the orzo and lime juice. Cook on high pressure for 3 minutes, followed by a quick pressure release.
Garnish with parsley and serve.
