Instant Pot Split Pea Soup

Ingredients
  

  • 1 lb split peas
  • 8 cups vegetable broth
  • 1 medium onion chopped
  • 2 carrots carrots chopped
  • 2 celery stalks celery chopped
  • 1 tsp dried thyme
  • 1/2 tsp smoked paprika
  • salt to taste salt
  • pepper to taste pepper

Instructions
 

  • Rinse the split peas in a colander.
  • In the Instant Pot, combine the split peas, vegetable broth, onion, carrots, celery, thyme, and smoked paprika.
  • Season with salt and pepper to taste.
  • Close the lid and set the valve to sealing.
  • Cook on high pressure for 30 minutes.
  • Allow the pressure to release naturally for 15 minutes, then quick release any remaining pressure.
  • Carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth.
  • Adjust seasoning to taste and serve.
