Instant Pot Spookydle Soup

Ingredients
  

  • 1/4-1/2 cup black pasta 'bats'
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 head broccoli, chopped
  • 1 can coconut milk
  • 5 oz baby spinach
  • 4 cups vegetable broth
  • to taste salt and pepper

Instructions
 

  • Sauté onions, garlic, cumin, turmeric, and paprika in olive oil for 2 minutes.
  • Add broccoli and toss with spices.
  • Add coconut milk, spinach, and vegetable broth. Mix well.
  • Close the lid and pressure cook for 10 minutes.
  • Let the pressure release naturally for 5 minutes, then quick release.
  • Puree the soup with an immersion blender or regular blender. Add more broth if needed.
  • Season to taste.
  • Serve with black pasta 'bats' as garnish.
