Instant Pot Sweet Potato Soup

Ingredients
  

  • 3 cups Water
  • 2 cans Diced Tomatoes
  • 1 14oz can Black Beans, drained
  • 1 cube Chicken Bouillon
  • 1.5 cups Crushed Tortilla Chips For serving
  • 1 each Avocado, diced Optional, for serving
  • to taste Sour Cream Optional, for serving
  • to taste Shredded Cheese Optional, for serving
  • to taste Lime Juice For serving

Instructions
 

  • Place water, diced tomatoes, black beans, and chicken bouillon into your Instant Pot. Seal the lid and set to High Pressure for 3 minutes with a 5 minute Natural Release.
  • Carefully remove the lid and squeeze the juice of 1 lime into the pot. Stir well and ladle into bowls.
  • Top with crushed tortilla chips, avocado, sour cream, and shredded cheese (optional).
