Instructions
Brown the Italian sausage in a large pot or Dutch oven. Drain off any excess grease.
Add the onions, carrots, and celery to the pot and cook until softened, about 5-7 minutes.
Add the garlic and zucchini and cook for another 2 minutes.
Stir in the Italian seasoning, black pepper, and red pepper flakes.
Add the white beans and beef or vegetable stock. Bring to a boil, then reduce heat and simmer for at least 30 minutes, or up to an hour, to allow the flavors to meld.
If desired, add collard greens during the last 15 minutes of simmering.
