soy curls or other vegan chicken substitute

sliced mushrooms

chopped green onions

chopped cilantro

Instructions
Heat the oil in a large pot over medium heat. Add the garlic and ginger and cook for 1-2 minutes, until fragrant.
Add the turmeric and cook for another minute.
Pour in the vegetable broth and bring to a boil.
Add the soy curls and mushrooms and simmer for 10-15 minutes.
Cook the rice noodles according to package directions. Drain and add to the soup.
Stir in the green onions and cilantro. Season with salt and pepper to taste.
Serve hot.
