Javanese-Inspired "Chicken" Soup (Vegan Soto Ayam)

Ingredients
  

  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 teaspoon turmeric powder
  • 8 cups vegetable broth
  • 1 cup soy curls or other vegan chicken substitute
  • 1/2 cup sliced mushrooms
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • 4 ounces rice noodles
  • to taste salt and pepper

Instructions
 

  • Heat the oil in a large pot over medium heat. Add the garlic and ginger and cook for 1-2 minutes, until fragrant.
  • Add the turmeric and cook for another minute.
  • Pour in the vegetable broth and bring to a boil.
  • Add the soy curls and mushrooms and simmer for 10-15 minutes.
  • Cook the rice noodles according to package directions. Drain and add to the soup.
  • Stir in the green onions and cilantro. Season with salt and pepper to taste.
  • Serve hot.
