Kale and Rice Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 6 cups vegetable broth
  • 1 cup uncooked rice
  • 1 bunch kale chopped, stems removed
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese optional, for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add garlic and cook for 1 minute more.
  • Pour in vegetable broth and bring to a boil. Add rice and reduce heat to a simmer.
  • Cook for 15-20 minutes, or until rice is tender.
  • Add kale and cook until wilted, about 5 minutes.
  • Season with salt and pepper.
  • Serve hot, garnished with Parmesan cheese if desired.
