kale
chopped, stems removed

Instructions
Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
Add garlic and cook for 1 minute more.
Pour in vegetable broth and bring to a boil. Add rice and reduce heat to a simmer.
Cook for 15-20 minutes, or until rice is tender.
Add kale and cook until wilted, about 5 minutes.
Season with salt and pepper.
Serve hot, garnished with Parmesan cheese if desired.
