Kale and White Bean Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium yellow onion diced
  • 2 cloves garlic minced
  • 6 cups vegetable broth
  • 15 ounces canned cannellini beans rinsed and drained
  • 8 ounces kale chopped
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup lemon juice
  • salt to taste
  • pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add garlic and cook for 1 minute more.
  • Pour in vegetable broth and bring to a boil.
  • Add cannellini beans and kale. Reduce heat and simmer for 15-20 minutes, or until kale is tender.
  • Stir in red pepper flakes and lemon juice. Season with salt and pepper to taste.
  • Serve hot.
