Instructions
Heat olive oil in a large pot over medium heat. Add carrots, celery, and onion and sauté for 7 minutes until softened.
Add garlic and sauté for 1 minute until fragrant.
Pour in chicken broth, thyme, oregano, and pepper. Bring to a boil, then reduce heat and simmer for 5 minutes.
Stir in shredded chicken and lemon juice. Simmer for 2 minutes.
Add keto noodles and simmer for 1-2 minutes, or until noodles are tender.
Serve warm.
