Keto Chicken Noodle Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 3 cups cooked chicken, shredded
  • 1 tablespoon lemon juice
  • 1 package keto noodles (made from mozzarella and egg)

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add carrots, celery, and onion and sauté for 7 minutes until softened.
  • Add garlic and sauté for 1 minute until fragrant.
  • Pour in chicken broth, thyme, oregano, and pepper. Bring to a boil, then reduce heat and simmer for 5 minutes.
  • Stir in shredded chicken and lemon juice. Simmer for 2 minutes.
  • Add keto noodles and simmer for 1-2 minutes, or until noodles are tender.
  • Serve warm.
