Keto Roasted Tomato Bisque

Ingredients
  

  • 1 C Finely Chopped Onion
  • 1 C Finely Chopped Carrot About 1 Medium
  • 1 C Finely Chopped Celery About 1 Large Rib
  • 1/4 C Butter
  • 4 C Water
  • 1 T Chicken Base
  • 2 cans Diced Fire Roasted Tomatoes
  • 1/2 C Heavy Cream
  • 8 T Olive Oil
  • to taste Freshly Ground Pepper
  • optional Parmesan Cheese As Garnish
  • optional Crème Fraîche or Sour Cream As Garnish

Instructions
 

  • Add butter to pot and sauté onion, carrot, and celery until softened.
  • Add water and chicken base. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Add diced tomatoes and simmer for another 10 minutes.
  • Use an immersion blender or transfer to a regular blender to puree until smooth.
  • Stir in heavy cream and season with pepper to taste.
  • Serve hot, garnished with Parmesan cheese or crème fraîche if desired. Drizzle with olive oil.
