Instructions
Add butter to pot and sauté onion, carrot, and celery until softened.
Add water and chicken base. Bring to a boil, then reduce heat and simmer for 20 minutes.
Add diced tomatoes and simmer for another 10 minutes.
Use an immersion blender or transfer to a regular blender to puree until smooth.
Stir in heavy cream and season with pepper to taste.
Serve hot, garnished with Parmesan cheese or crème fraîche if desired. Drizzle with olive oil.
