Kid Friendly Sweet Roasted Red Pepper Potato Soup

Ingredients
  

  • 2 medium yellow or Vidalia onions chopped
  • 2 teaspoons Canola Oil or Olive Oil
  • 1 jar roasted red sweet peppers chopped (7-8 ounce jar)
  • 2 teaspoons ground cumin
  • 1 teaspoon salt
  • 1 teaspoon ground coriander
  • 3 cups peeled diced potatoes
  • 3-4 cups chicken broth
  • 1 tablespoon lemon juice
  • ½ cup cream cheese
  • to taste cracked black pepper

Instructions
 

  • In a saute or frying pan, heat oil and saute onions until lightly brown and translucent.
  • In a soup pot,add chicken broth. Stir in onions, red peppers, cumin, salt and coriander. Cook and stir for 2 minutes.
  • Stir in potatoes and bring to a boil.
  • Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  • Carefully transfer soup to a blender (or use an immersion blender) and blend until smooth.
  • Return soup to the pot and stir in lemon juice and cream cheese. Heat through.
  • Season with cracked black pepper to taste.
