yellow or Vidalia onions
chopped

Canola Oil or Olive Oil

roasted red sweet peppers
chopped (7-8 ounce jar)

ground cumin

teaspoon
salt

teaspoon
ground coriander

cups
peeled diced potatoes
3-4
cups
chicken broth

tablespoon
lemon juice
½
cup
cream cheese
to taste
cracked black pepper
Instructions
In a saute or frying pan, heat oil and saute onions until lightly brown and translucent.
In a soup pot,add chicken broth. Stir in onions, red peppers, cumin, salt and coriander. Cook and stir for 2 minutes.
Stir in potatoes and bring to a boil.
Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
Carefully transfer soup to a blender (or use an immersion blender) and blend until smooth.
Return soup to the pot and stir in lemon juice and cream cheese. Heat through.
Season with cracked black pepper to taste.
